Scarpetta is a modern Italian restaurant brand that was founded in 2008 in New York City by chef Scott Conant. Its name comes from the Italian expression “fare la scarpetta,” which describes the act of using a piece of bread to mop up the last of a meal’s sauce—signifying both a respect for the food and a desire to savor every bite.

The brand blends classic Italian hospitality with a contemporary urban vibe, reflected in both its design and its approach to service. Scarpetta expanded over the years to include locations in Miami, Las Vegas, and Los Angeles, often as part of luxury hotel properties, aligning with a lifestyle-driven clientele.

Members of our team have helped ownership through Pont Hospitality to introduce Scarpetta to Europe through the Edition Madrid, marking a strategic international expansion.

The Madrid location retains the brand’s core identity while incorporating regional influences and ingredients, bringing refined Italian cooking to a discerning local and international audience. It positions itself not just as a restaurant but as a cultural and gastronomic experience rooted in tradition and executed with modern precision.
