When Gusto Italian came to us, the ambition was not simply to grow but to evolve. With 12 restaurants already performing strongly, the brief was to refresh the brand, attract new audiences and introduce a fresh perspective to new openings in Oxford and Nottingham, alongside a reinvention in Edinburgh.
Flexibility became the driving principle. Each space was designed to transition effortlessly from day to night, with defined zones for every occasion, from communal tables for celebrations to intimate booths and relaxed coffee settings. At the centre of each restaurant stands Gusto’s signature olive tree, a glowing symbol of Italian hospitality and shared experience.
Bars shift from espresso led mornings to lively evening cocktail destinations, while open kitchens transform pizza making into theatre, complete with statement ovens and interactive chef’s tables.
The highlight was Oxford’s Grade II listed Mitre Inn, where twinkling lights and greenery invite guests inside to interiors that balance navy tones and natural materials with historic features, blending heritage with contemporary Italian flair.
