Taj Hotel, the first luxury hotel in Dubai’s Jumeirah Lake Towers (JLT), aimed to become the district’s business and social heartbeat. They tasked us with identifying a gastronomic gap that would create buzz and an all-day dining solution that would also celebrate the rooftop pool.
We found the answers in an authentic South East Asian cuisine with the largely new flavours of Singapore and Malaysia, and a Greek Island inspired destination. Nonya blends traditional ornamental design features with contemporary vibrancy to authentically capture the spirit of Peranakan culture, which is also reflected in the name – derived from 'Baba-Nyonya’ – while Paros is an all-day restaurant on the 46th floor of the hotel that transitions into a nighttime destination. It also happens to be the only rooftop pool, bar and restaurant in JLT, so offers a much-needed sanctuary for guests and locals from dawn to dusk.
